What do you do if an employer asks for a pay stub or proof of income during an interview?

I was recently working with a job candidate going through the interview process that was asked by the employer to bring a pay stub/W-2 form to the interview. I found it rather concerning as did the candidate.

On initial request, the candidate did not provide the information and moved forward in the hiring process. She later received an email that stated the company wanted to move forward with an offer but needed the pay stub/W-2.

So what do you do in this situation?
